- VINIFICATION: The grapes are destalkes and lightly pressed, then undergo maceration for a maximum of fifteen/eighteen days in steel fermentation vats at 15-16 °C. The wine does not carry out malolactic fermentation in order to preserve the typical freshness and acidity of this native vine. It is then aged in steel for about five months. Two-Three months in bottle completes the ageing process.

- BOUQUET / TASTE: Intense, tasteful and refined, with citrus flavour at the beginning and fresh fruit, white flowers and mineralli taste in the end. Dry, fresh at the beginning and tasty in the end with apple and citrus aroma and a pleasant-tasting bitterish end.
- PAIRINGS: Cocktails, starters, pasta band risotto with fish sauce, grilled or baked fish, white salted meats, medium-seasoned cheeses or salami (such as ciauscolo).
